Fast food has become woven into American culture, but one health expert is pulling back the curtain on what’s really inside those iconic golden arches meals.
Bryan Johnson, known for his extreme longevity protocols, recently took on McDonald’s most popular menu items in a detailed breakdown that’s equal parts shocking and eye-opening.
His mission? To expose exactly what these ultraprocessed foods contain and how they impact human health.
The results might change how you think about that next drive-thru run.

The French Fry Deception
McDonald’s world-famous fries top the most-ordered list, and Johnson immediately addressed their addictive appeal.
This is such a distinct smell. This really is appealing. I understand why people eat this.
But behind that golden exterior lies a complex chemical story. The “zero grams trans fat” claim on labels doesn’t tell the whole truthโFDA regulations allow products with under 0.5 grams to list zero.
The fries are cooked in refined seed oils containing unsaturated fatty acids that oxidize rapidly, forming aldehydesโcancerous toxins that damage proteins, cell membranes, and DNA. This oxidation process has been linked to heart disease, liver disease, Parkinson’s, and Alzheimer’s.
Johnson also highlighted Advanced Glycation End products (AGEs), toxins formed when starch meets high temperatures. McDonald’s fries contain 20 times more AGEs than a home-baked potato.
These compounds drive oxidative stress and inflammation throughout the body, contributing to insulin resistance, vascular damage, and accelerated aging.
Big Mac: More Than Meets The Eye
The iconic Big Mac earned surprisingly mixed reviews from Johnson, who acknowledged its compelling design before diving into nutritional reality.
At 580 calories with 1,010 mg sodium (nearly half the daily value), the Big Mac packs 11 grams saturated fat and a shocking 9 grams added sugarโalmost as much as a glazed donut.
That sugar content creates an insulin spike followed by a mood crash roughly 90 minutes later, leaving eaters feeling “hangry” and craving more food.
There’s a bunch of added sugars and ultraprocessed carbohydrates, making you even more hungry.
The “100% beef” claim also requires scrutiny. Industrial feedlot cattle produce meat with altered fat profilesโless omega-3, more omega-6โand the patties are cooked in harmful oils.
Even seemingly healthy additions like pickles contain emulsifying agents that disrupt the microbiome and trigger chronic inflammation.
Breakfast Nightmares
The Hotcakes Horror
McDonald’s hotcakes breakfast earned the dubious distinction of being the most calorie-dense menu option at a staggering 1,340 calories with 41 grams added sugar.
I just feel so bad for the body when this goes in. This can’t be doing good things inside.
That massive sugar load spikes blood glucose, increases fat storage, and paradoxically triggers more hunger.
McGriddle Mayhem
Johnson’s reaction to the McGriddle was visceral disgust. The sandwich contains 13 grams added sugar and features processed bacon and sausageโmeats that numerous studies link to increased all-cause mortality.
These processed meats contain nitrites, known carcinogens that pose serious health risks. The cheese adds additional cancer-causing toxins to an already problematic package.
Why is there 13 grams of added sugar in a breakfast sandwich?
Chicken McNuggets: The Aluminum Problem
A 20-piece McNugget order revealed one of the most concerning findings: sodium aluminum phosphate in the batter.
Research raises serious concerns about aluminum salts and dementia risk. A French study found that just 0.1 mg aluminum in water correlated with cognitive decline, dementia, and Alzheimer’s risk.
One 20-piece McNugget box can expose consumers to up to 2.8 mg aluminumโ28 times more than the French study threshold.
The frying oil contains TBHQ (tertiary butylhydroquinone), used to stabilize oil for repeated use. Rodent studies on TBHQ show alarming effects:
- Cell death or malfunction
- DNA damage
- Enhanced tumor cell growth
The Caramel Frappe: Liquid Danger
Johnson called the caramel frappe “the worst” menu item, and the numbers support that assessment.
With 70 grams added sugarโequivalent to a Crumbl cookie in liquid formโthis drink represents one of the most harmful choices available.
Liquid sugar absorbs rapidly, creating massive metabolic stress. A Swedish study showed that even a 5% increase in added sugars correlated with a 23% increase in all-cause mortality.
The caramel coloring contains 4-methylimidazole (4-MEI), a manufacturing byproduct that produced lung tumors in mice and appears on California’s Proposition 65 list as a potential carcinogen.
Sugar’s Aging Acceleration
Throughout his analysis, Johnson emphasized how fructoseโabundant in these menu itemsโdamages the body at a cellular level.
Compared to glucose, fructose produces AGEs 8 to 10 times faster, driving aging processes throughout every body system.
It’s just pure wreckage for your metabolism, your liver, your pancreas, and blood vessels. And it just accelerates aging over your entire body.
The “Healthier” Snack Wrap Reality
Even McDonald’s snack wrapโmarketed as a lighter optionโcarries significant concerns.
At 390 calories with 6 grams saturated fat, it seems reasonable until examining the 900 mg sodium content. The chicken breading contains the same sodium aluminum phosphate found in McNuggets, carrying similar cognitive decline risks.
Why Fast Food Hooks Us
Johnson offered insight into fast food’s psychological grip, acknowledging its emotional pull even after years away.
There’s definitely a subconscious version of me that’s like, we’re getting McDonald’s. I’m excited.
He recognized how these foods provide temporary relief from life’s difficultiesโa moment of joy and comfort that comes at a devastating long-term cost.
I understand it’s easy and convenient and that it has all the characteristics that make you feel better because life is hard and brutal and mean and this is like the moment of joy and reprieve you have from life’s awfulness and then it just screws you over.
Marketing To Children
Johnson’s harshest criticism targeted McDonald’s marketing practices, particularly toward children.
They market this, then they put a pretty face. They dress this clown up, show it’s like fun and dandy, but they’re causing legit harm. It’s just awful.
The Happy Meal concept packages harmful ultraprocessed foods as child-friendly entertainment, creating lifelong habits during critical developmental years.
Making Better Choices
After examining every item, Johnson experienced a transformation in his relationship with these foods.
Now that I’ve actually touched it, I’ve talked about the ingredients. I know the science behind it. Honestly, I just feel repulsed by it.
His final message emphasized personal empowerment over these engineered foods.
I am the voice of courage and strength. When you are faced with a decision on whether or not you’re going to eat it, I believe in you. You are better than this.
Understanding what’s actually in fast foodโthe refined oils, aluminum compounds, excessive sodium, hidden sugars, and cancer-linked additivesโprovides the knowledge needed to make informed decisions about what fuels your body and affects your long-term health.
